Turkey Meatloaf

A Classic comfort food, this lean version of Meat Loaf is a keeper!

Ingredients

1 pound of turkey

2 slices of whole wheat bread torn into pieces

1/2 cup of finely diced sweet onion (yellow)

1/3 cup of grated carrots

1/4 cup of 1% milk

1/4 cup of tomato sauce

1 large egg slightly beaten

1 garlic clove, finely chopped

1 tablespoon of Worcestershire sauce

3/4 teaspoon of salt

1/4 teaspoon of fresh ground black pepper

For the topping:

2 tablespoons of ketchup

2 teaspoons of light brown sugar

1 teaspoon of yellow mustard

Let's Cook!

Preheat oven to 375 degrees

To make the meat loaf: in a large bowl, combine the turkey, bread crumbs, onions, carrot, milk tomato sauce, egg, garlic, Worcestershire sauce, salt and pepper. Mix very gently making sure all ingredients are thoroughly combined. Mount the meat loaf mixture onto the prepared baking sheet, patting it into a loaf shape with your hands.

To make the topping: in a small bowl, combine the ketchup, mustard and brown sugar. Now spoon the topping over the meat loaf, using the back of your spoon to spread the topping evenly.

Lastly, bake the meat loaf for 45 minutes or until the meat is no longer pink on the inside and is completely cooked (165degrees instant-read thermometer).
