Cajun Spiced Salmon with Herb Seasoned Rice

Ingredients

For Rice:

2 cups of Basmati or long grain rice

2 tablespoons of our Rice Seasoning Blend

2 tablespoons of margarine

1 teaspoon of olive oil

2 1/3 cups of water

For Salmon:

4 (4) ounce pieces of salmon (skin off)

2 tablespoons of olive oil

2 ½ tablespoons of our Cajun Spice Blend

½ cup of water

2 tablespoons of margarine

Let’s Cook!

For the Salmon:

Rinse salmon pieces and dry with paper towel

Using the 2 ½ tablespoons of the Cajun Spice Blend, rub all over each piece of salmon.

Pour 2 tablespoons of olive oil into your skillet along with 2 tablespoons of butter and ½ cup of water. Add salt to taste.

Add salmon and cook for 15 minutes over low to medium flame.

For the Rice:

Add 1 teaspoon of olive oil and pour in the rice.  Cook rice on high heat until browned, 3 minutes (DO NOT LET RICE BURN)

Add 2 1/3 cups of water, 2 tablespoons of margarine and 2 tablespoons of our Rice SeasonBlend.  Stir well and cover.  Cook EXACTLY 20 minutes on the lowest flame.

Turn off flame, give rice a quick stir before serving.

Serve with steamed asparagus.

This light meal is ready in 25 minutes flat so enjoy a cup of delicious green tea after your meal, you deserve it!
