Grilled Pineapple Salsa


1/2 cup chopped white onion

2 diced tomatoes

1 diced and seeded jalapeno

1 minced garlic clove

1/3 cup chopped cilantro

Juice of 1 lime

Sprinkle of salt (salt to taste)

1 pineapple

1 teaspoon fresh grated ginger

Let's Cook!

Grill 1 sliced pineapple until charred (not burned); then dice

Soak 1/2 cup of white onions for 15 minutes in COLD water; drain.

Toss with 2 diced tomatoes, 1 diced seeded jalapeno, 1 minced garlic clove, 1/3 cup cilantro, grilled and diced pineapple, 1 teaspoon grated ginger, juice of 1 lime and a sprinkle of salt. Mix well and let sit 5 minutes. Serve immediately.

Serving Suggestion: Serve with a spicy chicken or fish dish....hey that rhymed :)
