2 tablespoons of olive oil
1/2 pound of JennyO ground turkey
1 cup of finely chopped onions
1 cup of finely diced zucchini
1 1/2 ounces of Love That Spice Taco Blend
2/3 cup of frozen corn kernels
1 can of black beans rinsed and drained
2 cups of salsa
8 (6 inch) corn tortillas
1 1/2 cups of shredded Mexican cheese blend
1/4 cup of sliced scallions (white and light green parts only)
1/2 cup of fat free sour cream (optional) for serving
preheat oven to 350 degrees. Spray a 9x13 inch baking dish with cooking spray.
In a large skillet heat oil over medium high heat, add the turkey and cook until browned.
Stir in the onions and zucchini and cook until tender 5 minutes. Stir in the taco blend, 2/3 cup of water and the corn. Simmer until thickened, about 3 minutes, then stir in black beans.
Spread1/2 cup of the salsa in the bottom of the baking dish. Lay 4 tortillas over the salsa and spoon half of the meat mixture on top. Cover with 3/4 cup of salsa and 1 cup of the shredded cheese. Top with 4 more tortillas and add the rest of the meat mixture. Cover with the remaining 3/4 cup of salsa. Scatter the remaining cheese on top and bake for about 30 minutes or until the cheese is melted and bubbling.
Slice and serve topped with sour cream and scallions.
