Orange Glazed Scallops with Mango Salsa

For the scallops

3 tablespoons of Love That Spice Spicy Orange Gourmet Finishing Sauce

1/4 teaspoon of fresh ground black pepper

1/2 tablespoon of extra virgin olive oil

For the salsa

1 cup of finely diced mango

1/2 cup of finely chopped red bell peppers

2 tablespoons of finely diced red onions

2 teaspoons of finely chopped jalapenos

2 teaspoons of fresh squeezed lime juice

Let's Cook!

To make the salsa

In a bowl, stir together the mango, bell peppers, red onions, lime juice and jalapenos. Set aside.

To make the scallops - Please note: this recipe can be used for grilling or pan searing

Preheat the grill and lightly season the scallops with fresh black pepper. Grill directly on the grill grate uncovered for 2 to 3 minutes. Turn the scallops over and brush the tops with the Spicy Orange Gourmet Finishing Sauce.  Cover and grill until opaque, another 2 to 3 minutes. Remove from grill. Place the scallops on a plate and spoon the mango salsa over the top.
