Quick Recipe - Slice 2 pounds of carrots diagonally about 1 1/2 inches think. In a pot add 2 to 3 cups of water and bring to a boil. Add carrots and bring the water back to a boil until the carrots are somewhat tender. Remove from flame, strain carrots and blot them dry with a towel. In a skillet add 2 tablespoons of butter (or substitute) over high heat. In a bowl toss carrots with 1 tablespoon of olive oil, add 2 tablespoons of this blend and toss to cover. Completely optional, add a pinch of cayenne pepper. Put the carrots in the skillet with the butter over high heat to slightly sear the carrots for about 5 minutes. Remove from flame and serve immediately.
